WARREN, Ohio – Carney Wagyu Cattle Ranch, a third-generation family cattle farm in Trumbull County, is opening a butcher shop at 115 State Road NW.
Carney Wagyu Butcher Shop is a full-service, Italian influenced butcher shop where owners Michael Carney and Sandra Clark will share their passion for Wagyu with the community.
The shop will feature Wagyu items that customers of the cattle ranch’s online store have come to know, along with chicken, pork, in-house sausage recipes, the original Brier Hill sausage, hotdogs, smoke sticks, a full deli, pantry staples, breads and other specialty items.
The shop will open to the public at 10 a.m. Wednesday, and a grand opening celebration will be held from 10 a.m. to 4 p.m. Aug. 23. During the celebration, members of the community are invited to explore the shop, sample products and enter for a chance to win prizes.

Carney and Clark transformed the family farm, formerly a Hereford farm, nearly seven years ago when they began the transition to a full Wagyu farm. They enlisted the help of David Best to develop a herd based on DNA testing and parentage. The Wagyu herd has evolved over time and has been sold online and supplied to restaurants in the Mahoning Valley and beyond, including The Grand Resort, Heritage Steak and Whiskey, The Last Page, Delmonico’s and Vernon’s.
“Anyone who has tasted our products understands the passion and attention to detail that goes into crafting authentic Wagyu beef,” Carney said. “And now to have a physical location where we can share that knowledge and commitment with the community is truly something special.”
The shop will be led by Jason Lemmon, operations manager, who has 33 years of experience in whole animal butchering, sausage making and meat smoking.
The shop will be open from 10 a.m. to 6 p.m. Tuesday-Friday and 10 a.m. to 2 p.m. Saturdays. Customers can also shop online at CarneyWagyu.com.
